Lamb and Apple Casserole Recipe

You will need :-

2 lb. middle neck of lamb chops

1 tablespoon plain flour

salt and pepper

2 tablespoons oil

2 onions

2 carrots

1 stick celery

1 cooking apple

1 pint stock

 

Oven Setting:-  350°F; Gas Mark 4

 

Coat the chops with the flour seasoned with salt and pepper. Brown gently in the oil. Chop or slice the onions, carrots, celery and apple. Add to the meat and fry for 5 minutes. Add the stock and bring to the boil. Transfer to a flameproof casserole and simmer for 1½ hours. If preferred, cook in a moderate oven (350°F; Gas Mark 4).
