Curried Lamb Recipe

You will need.....       1.5 lb. lamb, cooked

                               1 tablespoon oil

                               1 onion

                               1 apple

                               2 tablespoons coconut, sweetened

Preparation Time      1 dessertspoon curry powder

10 minutes                 1 tablespoon flour
                               1/2 lb, tomatoes

Cooking Time            salt and pepper to taste

25 minutes                 8 oz. rice

 

Peel onion and chop. Peel, core and chop apple. Skin, seed and chop tomatoes. Chop lamb in small dice and fry quickly in heated oil. Remove from pan. Fry onion and apple until softened; stir in curry powder and flour, mixing well. Cook for several minutes.

 

Meanwhile, pour 1/2 pint boiling water over coconut and stir well. Strain liquid onto onion and apple mixture gradually, stirring until blended. Return meat to pan with tomatoes and seasoning, cover and simmer for 25 minutes. Sprinkle the rice into a saucepan of fast boiling water-1/2 teaspoon salt and 1/2 pint water to each ounce of rice. After 12 minutes test a grain and when tender strain and pun on a serving dish in the oven to dry out.

 

Serve curry on the rice on one dish or in individual portions. Fried poppadums or chapatties may be served as an accompaniment. Serves 4.

 

Quick Tip

 

Pour boiling water through the rice after cooking. If the grains have stuck together this will remove the remaining rice flour. Drain well and dry out in the oven. Lightly stir in a knob of butter to make the rice glisten.
