Whiting Meuniere Recipe

You will need :-

2 whiting , filleted

plain flour

salt and pepper

4 oz. butter

few lemon slices

few beetroot slices

juice of ½ lemon

2 teaspoons chopped parsley

 

Preparation Time:- 15 minutes

 

Cooking Time:- 10 minutes

 

Wipe the fish and dust well with flour, salt and pepper. Melt the butter and fry the fillets on both sides for about 10 minutes. Remove to a dish and keep hot.

 

Arrange the lemon slices around the edge of a larger platter. Place the fish in the centre. Cut the beetroot into diamonds and arrange between the lemon slices.

 

Lightly brown remaining butter in the pan, add lemon juice and parsley, mix well and pour over the fish. Serve immediately. Serves 4.

 

Quick Tip

 

To melt butter without burning it, add a small amount of cooking oil. The fat then can be raised to a much higher temperature without burning.
