Whitebait Recipe

You will need :-

½ lb. whitebait

1 oz. plain flour

salt and pepper

deep fat for frying

juice of 1 lemon

few lemon wedges

few sprigs parsley

 

Preparation Time:- 5 minutes

 

Cooking Time:- 3-4 minutes a batch

 

Rinse fish under cold water. Pat dry on cloth. Toss fish in flour mixed with salt and pepper. Place in frying basket, shake off excess flour and plunge basket into very hot fat. Cook for 3-4 minutes.

 

Drain fish on crumpled kitchen paper and sprinkle immediately with lemon juice.

 

Pile fish on to serving dish and garnish with lemon wedges and parsley. Serve very hot. Serves 4.

 

Quick Tip

 

Fresh sprats can be cooked in the same ways as whitebait. Remove the heads of the sprats before washing. Cook them in small batches, about four or give at a time.
