Turbot Mornay Recipe

You will need :-

4 fillet turbot

 

For seasoning:-

1/2 pint milk

1/2 lemon

1 oz. margarine

1 oz. flour

2 oz. grated cheese

 

Put the fillets of fish into a dish, add seasoning, 1/4 pint milk and the sliced lemon. Bake in the middle of a moderate oven (375°F-Gas Mark 4) for 15-20 minutes. While the fish is cooking prepare the sauce. Melt margarine in the saucepan, stir in the flour and cook the roux for 3 minutes. Remove the pan from the heat and gradually stir in the cold milk. Bring slowly to the boil, stirring all the time. Put the turbot on to a hot dish and strain the liquid into the sauce, stirring well to keep it smooth. Simmer the sauce for a further 1 minute then add the grated cheese and cook until dissolved. Season well. Pour over the sauce and serve with creamed spinach.
