Southern Fish Casserole Recipe |

You will need :- 1 lb. rock salmon 1 tablespoon plain flour salt and pepper 1 oz. butter 1 lb. potatoes 8 oz. can tomatoes 1 red pepper 2 sprigs mint 2 pickled gherkins 12 pickled capers
Oven Setting:- 350°F; Gas Mark 4
If rock salmon is unobtainable, cod or haddock may be used instead. Cut the fish into large chunks and toss them lightly in the flour seasoned with salt and pepper. Fry in the butter until golden. Put into casserole in layers with the sliced potatoes and pour over the tomatoes. Cut the pepper in half and remove the seeds and core. Cut the fish in small strips and add to the fish with the mint. Add water to cover. Cover and cook in a moderate oven (350°F; Gas Mark 4) for 40 minutes. Just before serving, add finely chopped gherkins and the capers.
