Smoked Haddock Casserole Recipe |

You will need :- 1 lb. smoked haddock fillet ½ pint milk 4 oz. lean bacon 1 medium onion 1 lb. potatoes sprig parsley and thyme 1 bay leaf salt and pepper 1 oz. butter 1 tablespoon flour chopped parsley
If smoked haddock is too expensive, the cheaper smoked cod fillet may be used instead. Put the haddock into a dish and cover with a mixture of equal quantities of milk and water.
Meanwhile, cut the bacon in pieces and fry gently to extract the fat. Take out and reserve the bacon, add the sliced onion and fry until golden. Put the bacon, onion and diced potatoes into a casserole with the herbs, salt and pepper. Put the haddock into a shallow pan, cover with the soaking liquid and bring to the boil. Simmer for 4 minutes, then drain off the liquid on to the potatoes and other vegetables. Simmer the vegetables for 30 minutes.
Melt the butter and work in the flour. Gradually add the cooked vegetables, bacon, liquid and the fish, cut in chunks. Simmer for 10 minutes and serve sprinkled with chopped parsley.
