Scallops au Gratin Recipe

You will need :-

4 scallops

1 pint milk

2 oz. butter

2 oz. plain flour

salt and pepper

2 oz. grated cheese

1 tablespoon browned breadcrumbs

1 tomato

bunch watercress

 

Preparation Time:- 20 minutes

 

Cooking Time:- 20 minutes

 

Gently cook scallops in milk for 10 minutes. Drain and reserve milk. Melt butter and add flour. Mix well. Cook for 2-3 minutes. Remove from heat and gradually add milk. Bring to the boil, stirring until thickened. Add half the cheese, seasoning, mix well and heat until melted.

 

Place a scallop in each of four deep shells, pour sauce over each and sprinkle with breadcrumbs and remaining cheese. Grill for 5 minutes or until golden brown.

 

Meanwhile, make tomato waterlily. With a sharp knife make slits in tomato in a criss-cross pattern almost to the base. Pull segments apart gently. Garnish scallops with waterlily and watercress. Serves 4.

 

Quick Tip

 

Cook the scallops in a little dry white wine. This will give much richer, more subtle flavor and make this into a more sophisticated dish.
