Quick Fish Casserole Recipe

You will need :-

1 onion

1 oz. butter

1 lb. fish fillets

salt

6 drops Tabasco sauce

12 oz. potatoes

6 oz. carrots

8 oz. French beans

6 oz. peas

1 heaped tablespoon fresh herbs (parsley, dill or fennel)

 

Cut the onion into rings and fry in the butter. Wash and wipe the fish, and sprinkle with a little salt. Cut the fish into 1 inch cubes. Add to the onion and brown well, and then stir in the Tabasco sauce. Peel the potatoes and carrots. Cut them into matchstick strips. Add to the sliced beans and peas in a saucepan. Cook in a very little water for 15 minutes until just tender. Combine the fish and vegetables in the cooking liquid. Add the herbs and adjust the seasoning if necessary. Cover tightly and simmer for 10 minutes.
