Prawns in Sour Cream Sauce Recipe

You will need :-

2 tablespoons butter or margarine

2 large cloves garlic, crushed

1 kg (2 lb.) green prawns, peeled and deveined

250 g (½ lb.) button mushrooms, sliced (reserve 5-6 whole for garnish)

1 x 300 ml carton light sour cream

pinch cayenne pepper

¼ cup dry sherry

1 teaspoon corn flour

1 small red pepper, seeded, cut into 5 mm (¼ inch) strips and blanched.

 

Cooking Time:- 15-20 minutes

 

Melt butter in fry pan on medium heat, add garlic and prawns and turn together until prawns start to change color. Add mushrooms including 6 whole ones, and toss with prawns. Cook for 2 minutes.

 

Remove whole mushrooms and set aside. Add sour cream and cayenne, stir well. Reduce heat a little, mix sherry with the corn flour and stir into prawn mixture, cook gently for 3-4 minutes until sauce has thickened. Garnish with blanched pepper strips and reserved mushrooms. Serves 4-6
