Prawns in Batter Recipe

You will need :-

1 pint prawns

salt and black pepper

2 oz. plain flour

2 teaspoons oil

4 tablespoons cold water

½ cucumber, diced

1 red pepper, cut into strips

1 oz. butter

2 oz. brown sugar

3 tablespoons vinegar

½ pint stock

1 tablespoon corn flour

deep fat for frying

1 egg white

1 x 12 ox. can bean sprouts

 

Preparation Time:- 20 minutes

 

Cooking Time:- 4-5 minutes a batch

 

Pick prawns and season well. Sift flour into a small bowl. Season. Add oil and water, beating until smooth. The mixture should be thick.

 

Make the sauce. Fry cucumber and strips of pepper in butter until soft. Add sugar, vinegar and stock. Bring to the boil and cook for 5 minutes. Mix corn flour to smooth paste with a little water. Add to sauce. Bring back to the boil, stirring until thickened.

 

Heat deep fat until a faint haze appears. Whisk egg white and fold gently into batter. Dip two or three prawns together in batter and fry immediately in hot fat for 4-5 minutes or until golden brown. Drain fritters on crumpled kitchen paper and serve piled up on a bed of bean sprouts. Pour sauce over and serve immediately. Serves 4.

 

Quick Tip

 

Crumpled kitchen paper will absorb the excess grease from the fritters very well. Alternatively, drain on crumpled kitchen foil to catch the fat in the creased of the foil.
