Prawn and Potato Salad Recipe

You will need :-

1 small can potatoes

2 tablespoons oil

salt and pepper

pinch dry mustard

pinch castor sugar

4 oz. peeled prawns

1 bunch watercress

 

Preparation Time:- 10 minutes

 

Cooking Time:- 5 minutes

 

Cook the potatoes in their liquid for 5 minutes. Drain while still hot. Put into a dish with oil, salt and pepper, mustard and sugar. Mix well and leave until cold.

 

Reserve a few prawns for garnish and add the rest to the potatoes. Mix well.

 

Pile the potato mixture on a serving plate. Wash the watercress and remove the stalks. Shake dry and arrange on top and round the heap of potatoes and prawns. Garnish with remaining prawns. Serves 4.

 

Quick Tip

 

If you are using new potatoes, cut them into slices before cooking to make them go further and to shorten the cooking time.
