Potted Shrimps Recipe

You will need :-

2 pints shrimps

4 oz. butter

juice of ½ lemon

pinch ground mace

3 oz. butter, clarified

1 bunch watercress

 

Preparation Time:- 20 minutes

 

Pick the shrimps, chop and mix with the butter. Beat well. Add the lemon juice and mace, beat well.

 

Divide the mixture into small pots, press firmly and cover with clarified butter (see Quick Tip below). Allow to cool.

 

Cover pots and keep in cold place. To serve, place moulded shrimps into bed of lettuce leaves or shredded lettuce or arrange pots on a small tray. Garnish with watercress. Serves 4.

 

Quick Tip

 

To clarify butter, heat it very gently in a wide, shallow pan. Carefully pour off the clear liquid into an earthenware or stone container, leaving the whitish deposits in the pan.
