Portuguese Cod Recipe

You will need :-

1½ cod fillet

flour

1 small onion

1 tablespoon chopped parsley

salt and pepper

12 oz tomatoes

2 tablespoons dry white wine

2 oz. butter

 

Oven Setting:- 375°F; Gas Mark 5

 

Skin the fish and cut the flesh into large chunks. Dust the pieces lightly with flour. Grease a casserole and sprinkle the bottom with finely chopped or sliced onion and parsley. Put in the fish and sprinkle with salt and pepper. Skin the tomatoes and remove the pips. Chop the flesh and place on the fish. Add the wine and dot with the butter. Put on a lid and bake in a moderately hot oven (375°F; Gas Mark 5) for 30 minutes. Serve sprinkled with a little freshly chopped parsley, if liked. This is good with mashed potatoes or new potatoes.
