Poached Fish with Cucumber Sauce Recipe |

Try something new in the way of gambling fish-strips of green or red pepper, slices or wedges of hard-cooked eggs, sliced cold cooked beets, pickles, mint, perhaps even orange wedges..
You will need :- 1 medium onions, sliced 3 slices lemon 3 sprigs parsley 1 bay leaf 1 teaspoon salt 2 peppercorns 1 pound fish fillets
In large skillets, heat to boiling 1.5 inches water with onion, lemon slices, parsley, bay leaf, salt and peppercorns.
Arrange fish in single layer in skillet. Cover; simmer 4 to 6 minutes or until fish flakes easily with fork.
Serves 2 -3.
With cucumber sauce Poach fish as directed above, except - use 3 pounds fish fillets and poach in two 12 inch skillets, doubling the seasonings. Serve with Cucumber Sauce (below)
Cucumber Sauce :- 1/4 cup shortening 2 tablespoons flour 2 cups milk 3 egg yolks, slightly beaten 1 medium cucumber, pared, seeded and diced 1 can (4.5 oz.) shrimp, rinsed, drained and coarsely chopped (1 cup) 1 teaspoon salt 1/4 teaspoon nutmeg 1/8 teaspoon pepper
Melt shortening in medium saucepan. Blend in flour. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat.
Stir at least half the hot mixture into egg yolks. Blend egg mixture into remaining hot mixture. Boil and stir 1 minute. Stir in remaining ingredients; heat through. Serve warm.
3 cups.
