Plaice Rolls Recipe

You will need :-

4 large plaice fillets

salt and pepper

grated rind and juice of 1 lemon

1 teaspoon chopped parsley

4 rashers streaky bacon

1 oz. butter

1 tablespoon milk

1 small onion

1 small tin tomatoes

dash Worcester sauce

 

Preparation Time:- 20 minutes

 

Cooking Time:- 30 minutes

 

Skin the fillets. Season well with salt and pepper. Lay each fillet skinned side up. Sprinkle with lemon rind, juice and parsley. Roll up head to tail. Remove the bacon rinds and wrap a rasher around each fillet. Dot each

with butter using not more than ½ oz. altogether, place on plate and add milk. Steam over a pan of hot water for 20 minutes.

 

Melt remaining butter in small pan. Peel and grate onion, add to butter and fry until transparent. Add tomatoes, Worcester sauce and seasoning of choice, e.g. basil, mixed herbs or dash garlic salt. Cook rapidly for 5 minutes.

 

Carefully remove fish rolls, turn on to side and grill for 2-3 minutes to brown bacon. Arrange the tomato mixture in a serving dish and place fish rolls in centre. Serves 4.

 

Quick Tip

 

To skin the fish: Hold the fish by the tail. Skin from tail to head with quick, short strokes keeping the edge of the blade close to the surface of the skin so that no fish is wasted.
