You will need :- 4 mackerel salt and pepper 2 oz. butter grated rind and juice of 1 orange dash garlic salt 1 small onion 1 orange, cut in wedges 4 sprigs parsley
Preparation Time:- 10 minutes
Cooking Time:- 30 minutes
Oven Setting:- 375°F; Gas Mark 5
Remove head, entrails, fins and gills. Clean fish under cold, running water. Season well.
Beat butter until soft. Add orange rind and juice, beating until smooth. Add garlic salt. Peel and grate or chop onion, add to butter and beat well. Divide between the mackerel and spread inside each fish. Place each to square of greased foil, making a double fold along the top and at each end. Place on baking tin and bake for 30 minutes in preheated oven.
Carefully fold back the foil, crimping the edges decoratively. Garnish each fish with orange wedges and parsley. Serve hot or cold. Serves 4.
Quick Tip
These are ideal for picnics. Serve them cold with a creamy horseradish sauce. Mix a little cream with the horseradish to make it a little less strong.
