Lobster Cocktail Recipe

You will need :-

6 oz. lobster meat

4 tablespoons mayonnaise

2 tablespoons tomato juice

salt and pepper

pinch mace

1 lettuce heart

4 lemon slices

pinch paprika

 

Preparation Time:- 20 minutes

 

Chop lobster meat roughly. Mix mayonnaise, tomato juice, salt, pepper and mace together. Mix well, add a little to the lobster meat to moisten it and keep the rest aside.

 

Wash and dry lettuce. Shred finely and divide evenly between four glasses. Divide the lobster meat between the glasses and pour the remaining mayonnaise mixture over.

 

Cut the lemon slices from the edge to the centre and twist one on the side of each glass. Sprinkle top of mayonnaise mixture with paprika. Serve very cold with thinly sliced bread and butter. Serves 4.

 

Quick Tip

 

Serve with bread and butter 'cigars': cut bread very thinly using a hot knife. Trim off crusts, butter bread and roll tightly. Pack into a tin and cover with a damp cloth. They will keep fresh for 1-2 days.
