Fried Soft-Shell Crabs Recipe

You will need :-

12 soft-shell blue crabs

2 eggs

1/4 cup milk

2 teaspoons salt

3/4 cup all-purpose flour

3/4 cup dry bread crumbs

Shortening

 

Have your fish retailer dress the crabs for eating. Rinse in cold water; drain.

 

Beat eggs, milk and salt until blended. Stir together flour and crumbs. Dip crabs into egg mixture, then coat with flour mixture.

 

Heat shortening (1/8 inch) in large skillet. Turning crabs carefully, fry in shortening over medium heat 8 to 10 minutes or until brown. If desired, serve with lemon wedges.

 

Serves 6.

 

If using self-rising flour, decrease salt to 1 1/4 teaspoons.

 

Note: Soft-shell crabs can be deep-fat fried. Heat fat (3 to 4 inches) to 375° in deep fat fryer or kettle. Place crabs in basket: fry in deep fat 3 to 4 minutes or until brown.
