Fish Curry Recipe

You will need :-

2 lb. coley

salt and pepper

juice of ½ lemon

1 onion

2 oz. butter

2 oz. plain flour

1 tablespoon curry powder

1 pint stock or water

1 small cauliflower

1 teaspoon chopped parsley

 

Preparation Time:- 15 minutes

 

Cooking Time:- 25 minutes

 

Skin the fish and cut into small pieces. Season well. Sprinkle with lemon juice. Peel and grate or chop the onion. Fry in butter until transparent. Add fish and fry gently for 5 minutes. Remove fish and keep to one side.

 

Add flour and curry powder to butter, mix well and cook for 5 minutes, stirring frequently. Remove pan from heat and gradually add stock or water. Return to heat and bring to the boil, stirring until thickened. Cook for 5 minutes. Add fish to sauce and cook for further 10 minutes.

 

Cook cauliflower sprigs in salted, boiling water. Drain and arrange around edge of dish. Pour fish and sauce into centre. Garnish with parsley. Serves 4.

 

Quick Tip

 

This mixture is delicious when it is spread on hot, buttered toast and popped under a hot grill for 3-4 minutes. Top with a little chutney and serve hot.
