Fillet of Sole Bonne Femme Recipe

You will need :-

1 pound sole or flounder

2 tablespoons butter or margarine, melted

3 tablespoons lemon juice

1/4 cup minced onion

1/2 pound mushrooms, washed, trimmed and sliced, or

1 can (6 oz.) sliced mushrooms, drained

2 tablespoons butter or margarine

2 tablespoons flour

1/4 teaspoon salt

1/8 teaspoon pepper

1 cup milk

 

Heat oven to 350°. Place fish in ungreased baking dish. 11.5x7.5x2 inches. Combine the melted butter, lemon juice and onion; pour over fish. Turn fish coat both sided with butter mixture. Bake skin side up 20 to 30 minutes or until fish flakes easily with fork.

 

Cook and stir mushrooms in 2 tablespoons butter until mushrooms are tender. Stir in flour, slat and pepper. Cook over low heat, stirring until mixture is bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. If desired, thin sauce with juice from fish; pour over fish before serving.

 

Serves 3 - 4.
