Devilled Lobster Recipe

You will need :-

1 small lobster, boiled

2 oz. butter, melted

2 oz. white breadcrumbs

2 tablespoons thick cream

1 teaspoon cayenne pepper

2 lemons

1 oz. cheese, grated

few stuffed olives, slices

few sprigs parsley

 

Preparation Time:- 10 minutes

 

Cooking Time:- 20 minutes

 

Oven Setting:- 350°F; Gas Mark 4

 

Remove claws from lobster and pick out meat. Cut shell in half lengthwise, remove intestinal cord and sac (the grey, greenish matter from head end). Carefully remove white meat and chop finely with claw meat. Wash and dry shells.

 

Mix the meat, butter, 1½ oz. breadcrumbs, cream and cayenne pepper together. Pile mixture back into shells and sprinkle with remaining breadcrumbs, juice of 1 lemon and cheese.

 

Bake in centre of preheated oven for 20 minutes. Serve hot, garnished with lemon slices, olives and parsley. Serves 4.

 

Quick Tip

 

If no fresh lobster is available, make up the recipe with canned or bottled lobster. Put the mixture into scallop shells.
