Deep-Fried Fish or Shallow-Fried Fish Recipe

Use several types of fish if you wish. Serve with Tartar Sauce or lemon halves (wrapped in cheesecloth).

 

You will need :-

2 pounds fish fillets, steak or pan-dressed fish

1 teaspoon salt

1 cup all purpose flour*

1/8 teaspoon pepper

2 eggs, slightly beaten

1 cup dry bread crumbs

 

Heat fat or oil (3 to 4 inches) to 370° in deep fat fryer or kettle. If fillets are large, cut into serving pieces. Stir together flour, salt & pepper. Coat fish with flour mixture; dip into eggs, then coat with bread crumbs. Fry in deep fat about 4 minutes or until golden brown.

 

Or shallow-fry fish in hot shortening (1.5 to 2 inches) in skillet about 4 minutes or until brown.

 

Serves  6.

 

*If using self-rising flour, omit salt.

 

Variation

Batter-fried Fish: Prepare Thin Fritter Batter. Coat fillets with flour, then dip into batter to coat completely. Fry in deep fat about 3 minutes or until golden brown. Or fry in hot shortening (1.5 to 2 inches) in large skillet about 4 minutes or until golden brown.
