Cucumber Crunchy Herrings Recipe

You will need :-

4-6 small herrings

salt and pepper

pinch mustard

approx. 1 oz. medium oatmeal

½ cucumber

1 small carton soured cream

grated rind and juice of 1 orange

orange segment

 

Preparation Time:- 20 minutes

 

Cooking Time:- 15 minutes

 

Clean and bone fish by removing head, entrails, gills and fins. Wash fish well under cold, running water. Make a slit from belly to tail and place slit down on board. Press backbone firmly with knuckles, turn over and remove backbone. Season well with salt, pepper and mustard. Roll each in oatmeal. Fry or grill for 20 minutes, turning frequently.

 

Peel cucumber and dice. Put into bowl with 2 level tablespoon salt. Toss and leave for 15 minutes. Mix cream with orange rind and juice. Pour off excess liquid from cucumber. Add cream and mix well.

 

Arrange herrings on serving platter. Garnish with orange segments. Serve cucumber mixture separately from a bowl. Serves 4.

 

Quick Tip

 

Plain yoghourt can be used successfully instead of cream for this sauce. Yoghurt is cheaper than cream and still gives a delicious flavor.
