Creamy Topped Scallops Recipe |

You will need :- 8 scallops 1 small onion ½ pint white wine 1 oz. butter 1 oz. flour ¼ pint milk salt and pepper ¼ pint double dairy cream 2 oz. Lancashire cheese, crumbled
Preparation Time:- 15 minutes
Cooking Time:- 15 minutes
Wash scallops thoroughly. Put the scallops, onion and wine into a saucepan. Simmer until scallops become opaque, about 8 minutes. Remove scallops and onion with a draining spoon and chop. Reduce wine to ¼ pint.
Melt butter in a pan, stir in flour and cook for a minute. Remove from heat and gradually stir in milk and wine. Return to heat and bring to boil, stirring all the time until mixture bubbles and thickens. Stir in scallops and onion and season to taste. Turn into 4 small dishes.
Lightly whip cream and stir in cheese. Spread on top of scallop mixture. Put under a hot grill until golden and bubbling. Serves 4.
Quick Tip
For a quick party dish, whip cream cheese with double dairy cream. Put into a piping bag and pipe swirls on the top of halved hard boiled eggs.
