Crab Mayonnaise Recipe

You will need :-

6 oz. crab meat

2 hard-boiled eggs

¼ pint mayonnaise

coral if available or anchovies

watercress

 

Preparation Time:- 15 minutes

 

Chop crab meat roughly. Chop eggs and mix with meat. Arrange the mixture in a neat pile in a shallow glass dish. Pour mayonnaise over.

 

Arrange the coral or anchovies in a pattern over the mayonnaise and garnish with watercress around the edge.

 

Serve with a wreath of thinly sliced down bread and butter. Serves 4.

 

Quick Tip

 

If home-made mayonnaise is not available, add 4 tablespoons whipped cream and 1 whisked egg white to ½ pint of bottled mayonnaise. This will increase the bulk and diminish the acid flavor of the bought mayonnaise.
