Cod with Orange Salad Recipe

You will need :-

4 cod cutlets

salt and pepper

1 oz. butter

1 oz. white breadcrumbs

1 oz. cheese, grated

3 small oranges

1 tablespoon oil

1 teaspoon lemon juice

1 bunch watercress

 

Preparation Time:- 15 minutes

 

Cooking Time:- 10 minutes

 

Wipe the fish and season well. Dot with half the butter and grill for 5 minutes. Mix breadcrumbs and cheese together. Turn cutlets and cover with cheese mixture, dot with remaining butter and grill for another 5 minutes.

 

Meanwhile, peel oranges, removing all pith. Cut into thin slices and mix with oil and lemon juice.

 

Arrange cutlets on long serving platter. Drain oranges and arrange around the fish. Garnish with watercress. Serves 4.

Frozen cod steaks are an excellent alternative to fresh fish. They are easy to cook and stay a good shape because of their individual wrappers. Use them when in a hurry.
