Bream and Almond Scallop Recipe |

You will need :- 3 oz. butter 1 lb. cooked bream, flaked salt and pepper 2 tablespoons dry sherry 2 eggs 8 tablespoons evaporated milk 1 tablespoon chopped parsley 2 oz. fresh white breadcrumbs 1 oz. blanched almonds
Preparation Time:- 10 minutes
Cooking Time:- 25 minutes
Oven Setting:- 350°F; Gas Mark 4
Melt 1 oz. butter and gently cook fish for 3 minutes. Season. Add sherry. Mix well.
Beat the eggs, add evaporated milk and parsley, stirring well. Add to fish and mix. Toss crumbs well in remaining melted butter.
Pour fish mixture into greased ovenproof dish, sprinkle with crumbs and almonds. Bake in centre of oven for 20 minutes. Serves 4.
Quick Tip
Bream in a firm, fleshy fish, so if it is not available, the recipe can be made up with either halibut or turbot.
