Baked Mackerel Recipe |

You will need :- 4 mackerel salt and pepper 1 onion, sliced 4 tablespoons vinegar 1 bay leaf few cos lettuce leaves 2 tomatoes, cut into quarters
Preparation Time:- 15 minutes
Cooking Time:- 40 minutes
Oven Setting:- 400°F; Gas Mark 6
Bone the fish by removing head, entrails, gills and fins. Wash fish well under cold, running water. Make a slit from belly to tail, place slit side down on board. Press backbone firmly with knuckles, turn over and remove backbone. Season inside of fish well. Roll fish from head to tail, keeping tail in the air.
Place in deep ovenproof dish, cover with water, add onion, vinegar and bay leaf. Cover and cook for 40 minutes. Lift carefully from liquor and allow to cool.
Arrange lettuce leaves on large serving dish, place fish on top and garnish with tomatoes. Serves 4.
Quick Tip
If preferred, the prepared fish can be left whole and baked in a shallow dish. It goes well with creamed potatoes and pickled red cabbage.
