Pineapple Ginger Cream Recipe

You will need :-

1 x 11 oz. can pineapple cubes

¼ pint double dairy cream

2 pieces stem ginger, finely chopped

16 ginger biscuits

For the decoration:-

slices of stem ginger

 

Preparation Time:- 15 minutes plus 12 hours chilling time

 

Drain pineapple cubes, reserving juice and cut each cube in half.

 

Lightly whip cream and add pineapple and chopped ginger. Dip biscuits in pineapple juice and place round sides of 4 glass serving dishes. Spoon in pineapple and cream mixture.

 

Chill for 12 hours. Serve decorated with a slice of stem ginger in the center of each serving dish.
