Montelimar Pudding Recipe

You will need.....       6 oz. can evaporated milk

                               1 oz. glace cherries

                               2 oz. marshmallows

                               1/2 lemon jelly tablet

                               1/4 pint very hot water

Preparation Time      juice of 1/2 lemon

20 minutes                1 oz. castor sugar

                            

Chill the evaporated milk in the refrigerator. Chop the cherries and cut the marshmallow in small pieces using wet scissors.

 

Dissolve the jelly tablet in the hot water. Cool until it is thick but not set. Whip the evaporated milk until it is light and foamy. Add the cooled jelly, blending it in well.

 

Stir in the lemon juice, cherries, marshmallows and castor sugar. Turn into a serving dish or mould and chill until set. Just before serving, turn out and decorate with canned or maraschino cherries.

 

Quick Tip

 

Marshmallows make a quick topping for a special dessert. Arrange sliced peaches in an ovenproof dish, sprinkle with icing sugar and brandy; cover with marshmallows then brown under the grill.
