Gooseberry Fool Recipe

You will need :-

1½ lb. gooseberries

2 tablespoons water

4 oz. sugar

½ pint double dairy cream, lightly whipped

 

Preparation Time:- 15 minutes

 

Cooking Time:- 15 minutes

 

Top and tail gooseberries and wash. Place in a pan with water and put over a gentle heat, stirring frequently, until gooseberries are soft. Sieve or put into a blender, reserving a few for decoration, and stir in sugar. Allow to cool.

 

Fold in lightly whipped cream. Turn into serving dish.

 

Chill until ready to serve. Decorate with the remaining gooseberries. Serves 4.

 

Quick Tip

 

A quicker way to top and tail gooseberries instead of using your fingers is to use a sharp pair of scissors.
