Frosted Mint Recipe

Such a refreshing combination of flavors.

 

1 envelope unflavored gelatin

1 can (1 lb. 4.5 oz.) crushed pineapple, drained (reserve 1/2 cup syrup)

1/3 up mint-flavored apple jelly

3 drops green food color

1 cup chilled whipping cream*

 

In small saucepan, sprinkle gelatin on reserved syrup to soften; stir over low heat until gelatin is dissolved. Stir in jelly and food color. Cook over medium heat, stirring constantly, until jelly is melted. Stir in pineapple. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon.'

 

In chilled bowl, beat cream until stiff. Fold in gelatin mixture. Pour into square pan, 8x8x2 inches, or into parfait glasses. Chill until firm.                

 

Serves 6-8.

 

* Do not substitute dessert topping mix for the whipped cream.
