Chocolate Peppermint Dream Recipe

1 1/2 cups chocolate wafer crumbs (about 25 wafers)

3 tablespoons butter or margarine, melted

24 large marshmallows or 2 1/4 cups miniature marshmallows

1/2 cup milk

1 teaspoon vanilla

1/8 teaspoon salt

6 drops peppermint extract

6 drops red food color

1 cup chilled whipping cream or 1 envelope (about 2 oz.)

dessert topping mix

2 tablespoons crushed peppermint candy

 

Mix wafer crumbs and butter thoroughly. Press mixture evenly in bottom of square pan 8x8x2 inches.

Heat marshmallows and milk over medium heat, stirring constantly, until marshmallows are melted. Remove from heat; stir in vanilla, salt, peppermint extract and food color. Chill until thickened.

 

In chilled bowl, beat cream until stiff. (If using dessert topping mix, prepare as directed on package). Blend in marshmallow mixture. Pour over crumb crust. Cover; chill at least 12 hours. Just before serving, sprinkle with candy.
