Trout with Almonds (France) Recipe

You will need:-

4 trout

1 tablespoon seasoned flour

3 oz. butter

3 oz. flaked almonds

1 tablespoon cooking oil

2 tablespoons lemon juice

few sprigs parsley

 

Preparation Time:- 10 minutes

 

Cooking Time:- 10 minutes

 

Toss the cleaned fish in seasoned flour. Melt 1 oz. butter in frying pan. Add the almonds, fry until lightly browned, then remove from pan and keep on one side.

 

Add remaining butter to pan with the oil. Fry the trout gently for about 10 minutes or until nicely browned, turning once during the cooking.

 

To serve, sprinkle with the browned almonds and lemon juice. Decorate with parsley. Serves 4.

 

Quick Tip

 

To prevent butter from burning when used for frying fish, add 1 tablespoon of cooking oil. (A higher proportion of oil would alter the characteristic delicate flavor of butter).
