Spanish Omelette (Spain) Recipe

You will need:-

2 small tomatoes

1 small onion

1 tablespoon French beans, cooked

1 medium potato

1 oz. smoked garlic sausage

4 eggs

1 tablespoon peas, cooked

salt and pepper to taste

1 teaspoon olive oil

 

Preparation Time:- 10 minutes

 

Cooking Time:- 4 minutes

 

Peel and chop tomatoes removing seeds. Chop the onion and French beans, dice the potato and sausage. Beat the eggs lightly, add the vegetables, sausage, salt and pepper.

 

Melt the oil in an omelette pan, pour in the egg mixture and cook quickly for 3 minutes. Place for a further minute under a hot grill to brown.

 

Slide out without folding on to a hot plate. Serves 2.

 

Quick Tip

 

The omelette can be varied by adding some prawns. Prepare these by pinching off head and stretching out tail end using the finger and thumb. Remove tail with pinch and twist, and then the body shell. The roe too should be removed.
