Spaghetti Bolognese (Italy) Recipe

You will need:-

12 oz. spaghetti

1 oz. Parmesan cheese

For the sauce:-

1 onion

1 carrot

1 stick of celery

1 clove garlic (optional)

½ beef stock cube

1 tablespoon oil

2 oz. bacon, diced

8 oz. freshly minced beef

1 8 oz. can peeled tomatoes

1 2¼ oz. can tomato puree

1 bay leaf

salt, pepper and sugar to taste

 

Preparation Time:- 10 minutes

 

Cooking Time:- 40 minutes

 

Chop onion, carrot and celery finely. Crush garlic if used. Dissolve stock cube in ¼ pint boiling water. Melt the fat, fry vegetables, bacon and garlic gently until golden brown. Add mince, stir and cook until lightly browned. Add tomatoes and juice from the can, puree, bay leaf, stock, salt, pepper and a pinch of sugar. Cook gently for 30-40 minutes stirring occasionally.

 

Taste and correct seasoning if necessary. Meanwhile cook spaghetti (see Quick Tip below), drain and put on hot serving dish.

 

Pour the sauce into the center. Sprinkle Parmesan cheese over the top.

Note: This dish looks more attractive served in individual portions. Serves 4.

 

Quick Tip

 

To cook lengths of spaghetti: put one end of the bundle into boiling water and as it softens, coil round until the other end slips into the water without breaking. To save time use fancy shapes instead, such as shells or bows.
