Sole Veronique (France) Recipe

You will need:-

8 medium fillets sole

salt and pepper to taste

1 wine glass dry white wine

1½ oz. butter

1 oz. flour

¼ pint milk

4 oz. white grapes

 

Preparation Time:- 10 minutes

 

Cooking Time:- 10 minutes

 

Oven Setting:- 375°F; Gas Mark 5

 

Roll each fillet (see Quick Tip, Fish in Spinach Sauce (Denmark) Recipe). Well butter a baking dish and arrange fillets in this. Sprinkle with salt and pepper and pour over the wine. Cook uncovered for about 10 minutes in a moderately hot oven. Lift the fish carefully on to a warm serving dish.

 

Meanwhile heat the butter, stir in the flour and a measured half pint of liquid made up of juices from the fish and milk. Bring to the boil and cook, stirring until smooth and thick. Taste and correct seasoning.

 

Pour over the fish and decorate with the grapes, seeded (see Quick Tip below) and halved. Serves 4.

 

Quick Tip

 

To seed grapes: sterilize a brand new hair grip by pouring boiling water over it. Push the loop end into the grape at the stalk end and pull out the seeds.
