You will need:- 12 oz. short crust pastry 1 2 oz. can anchovy fillets 2 oz. melted bacon fat 1 lb. onions, peeled and sliced salt and pepper to taste 2 eggs 2 oz. Gruyere cheese, grated
Preparation Time:- 10 minutes
Cooking Time:- 30 minutes
Oven Setting:- 350°F; Gas Mark 4
If using frozen pastry defrost until pliable enough to roll out. Line a fluted flan ring with pastry. Drain oil from anchovies. Heat the bacon fat, add the onions and seasoning. Cook gently, stirring occasionally, for half an hour in a covered pan. Cool. Meanwhile, line pastry case with greaseproof paper, weight with rice or baking beans and bake 'blind' for 10 minutes. Remove the paper and beans.
Beat the eggs lightly, add the onion mixture and cheese, stir well. Pour into pastry case. Lay the anchovy fillets in a trellis pattern over the surface. Bake in a moderate oven for 20 minutes.
Serve as a snack, or as a main course, with, or followed by, a green salad. Serves 4.
Quick Tip
Peeling onions: put in cold water for half an hour before peeling and this will help to prevent irritation to the eyes. Alternatively, peel the onions under a running cold tap.
