Normandy Apple Flan (France) Recipe

You will need:-

12 oz. rich short crust or flan pastry

1 pint thick apple puree, well sweetened

3 dessert apples, peeled, cored and sliced

juice of 2 lemons

2 tablespoons apricot jam

2 tablespoons water

 

Preparation Time:- 5 minutes

 

Cooking Time:- 35 minutes

 

Oven Setting:- 375°F; Gas Mark 5

 

Line a 9 inch flan ring or tin with the pastry. Prick the base, and bake 'blind' for 5 minutes (see method, Onion Quiche (France) Recipe).

 

Fill the flan case with the apple puree. Toss the sliced apples in half the lemon juice, and top the flan with concentric slices of apple. Bake in a moderate oven for 25 to 30 minutes. Remove and cool.

 

Heat the jam, water and rest of lemon juice until syrupy but do not allow to boil. Press through a sieve and spoon over the tart to glaze. Serves 4-6.

 

Quick Tip

 

To make a quick glaze: thicken sweetened fruit juice with arrowroot. Bring ½ pint juice to the boil, stir in 1 heaped teaspoon arrowroot mixed to a smooth paste with water. Cook, stirring until glaze clears.
