You will need:- 3 tablespoons oil 1 small onion, finely chopped 1 lb. cooked lamb, diced or minced 1 2¼ oz. can tomato puree salt and pepper ½ lb. raw potatoes, sliced 1 large egg plant, sliced 1 clove garlic, crushed (optional) ½ lb. tomatoes, peeled and sliced ½ pint cheese sauce 2 oz. cheese, grated 1 egg yolk sprig of parsley
Preparation Time:- 25 minutes
Cooking Time:- 15-20 minutes
Oven Setting:- 350°F: Gas Mark 4
Heat a third of the oil in a frying pan. Add onion and allow to color, then add the meat and shake over a brisk heat for a few minutes. Remove from heat. Add tomato puree and season well. Put in an ovenproof dish and keep warm. Heat the remaining oil in the frying pan; put in the potatoes and fry gently until brown. Then take out and arrange on top of the meat.
Add the egg plant to the frying pan and cook for 5-7 minutes. Then add the garlic, if used, and then sliced tomatoes. Continue cooking for a further five minutes and then pour over the potatoes. Meanwhile prepare the cheese sauce. Stir in the egg yolk (see Quick Tip below). Pour over the dish.
Sprinkle top with the grated cheese and bake in a moderate oven for 15-20 minutes until well browned. Decorate with parsley. Serves 4.
Quick Tip
To separate eggs: crack the shell in the middle against the edge of the basin. As the shell divides, let the white fall into the basin and cradle the yolk. Tip yolk into other shell half and let white fall into basin. Put yolk in fresh basin.
