Fish in Spinach Sauce (Denmark) Recipe

You will need:-

2 large plaice, filleted

4 oz. fresh or frozen prawns

1 oz. butter

salt and pepper to taste

1 packet instant potato (for 4)

½ lb. fresh or 5½ oz. packet frozen spinach

1 oz. flour

¼ pint milk

2 tablespoons cream

 

Preparation Time:- 15 minutes

 

Cooking Time:- 10 minutes

 

Oven Setting:- 375°F; Gas Mark 5

 

Roll the fillets skin side inwards, and place on end close together in an ovenproof dish (see Quick Tip below). Fill centers with peeled prawns, reserving a few for decoration. Melt the butter, and pour half of it over them. Sprinkle well with salt and pepper. Cover with foil and bake in a moderately hot oven for 10 minutes. Place on a warm serving dish.

 

Meanwhile, make up the mashed potato and keep hot. Cook the spinach in as little water as possible; when tender, press through a sieve.

 

Blend the flour with the rest of the butter, stir in the milk, then the spinach puree. Season with salt and pepper. Cook, stirring, for 3 minutes, then withdraw from heat and add cream. Taste and correct seasoning. Pour over the plaice rolls. Top each with a prawn and pipe or fork mashed potato round the sides of the serving dish. Serves 4.

 

Quick Tip

 

Remember always to roll tail end of fillet inside first and if necessary secure roll with a wooden cocktail stick, which can be removed when fish is cooked. For a large fish, halve each double fillet before rolling.
