Eggs Florentine (Italy) Recipe

You will need:-

8 oz. spaghetti

2 lbs. fresh or 12 oz. packet frozen spinach

4 eggs

2 oz. butter

1 tablespoon cooking oil

good pinch nutmeg

salt and pepper

 

Preparation Time:- 5 minutes

 

Cooking Time:- 20 minutes

 

Cook the spaghetti in plenty of well salted boiling water until tender. Drain. Stir in 1 oz. butter. If using fresh spinach, wash well. Cook, drain and chop. Sprinkle with nutmeg and a little finely ground pepper.

 

Arrange he spaghetti on a hot serving dish and top with a layer of spinach.

 

Fry the eggs in the rest of the butter, adding the oil to prevent it from burning. Place the eggs on top of the spinach. Serve immediately. Serves 4.

 

Quick Tip

 

All pasta should be cooked in plenty of boiling salted water until just firm and tender. 1 tablespoon oil added to the water prevents pasta sticking together and also improves its flavor.
