Cremes Au Chocolat (France) Recipe

You will need:-

3 eggs

4 oz. plain chocolate

3 oz. unsalted butter

3 oz. castor sugar

orange rind, grated

¼ pint double cream

 

Preparation Time:- 15 minutes

 

Separate the eggs. Melt the chocolate, broken into small pieces, in a basin over a saucepan of boiling water (see Quick Tip below). Remove basin from heat, stir in the butter and sugar.

 

When well blended add the egg yolks, one at a time, beating well after each addition. Add the grated orange rind reserving a little for decoration. Whisk the egg whites until they form stiff peaks. Fold into the chocolate mixture and pour into little soufflé dishes. Chill, overnight if possible.

 

To serve, whip the cream until stiff and pipe or swirl on top of each dish. Sprinkle with grated orange rind. Serves 4.

 

Quick Tip

 

To melt chocolate: use plain chocolate. Cut into small lumps and put in a small basin over a pan of hot water. Allow to melt. Remove from heat. Stir gently until smooth. Do not overheat or chocolate will become oily.
