You will need:- 1 cooking apple 1 large carrot 2 oz. butter 1 lb. can or bottle sauerkraut 1 teaspoon caraway seeds (optional) salt and pepper to taste 4 thick slices fat streaky bacon 4 Knackwurst or Frankfurt sausages
Preparation Time:- 5 minutes
Cooking Time:- 55 minutes
Oven Setting:- 375°F; Gas Mark 5
Peel, core and grate the apple. Peel and grate the carrot. Melt the butter. Put in an ovenproof casserole, stir in the sauerkraut, grated apple, carrot, caraway seeds if used, and seasoning. Lay the bacon slices on top and cover.
Bake in a moderately hot oven for 40 minutes. Remove lid, arrange Knackwurst or Frankfurt sausages on top and return to oven for another 15 minutes.
Serve from the casserole or turn on to a warm serving dish, arranging the sausages and bacon slices on the sauerkraut. Serves 4.
Quick Tip
Sauerkraut can be served instead of a vegetable with any well seasoned continental sausage, veal, pork or bacon. To make the flavor richer, cook gently with a little stock or white wine. Cummin seeds can be added instead of caraway.
