Baked Pears (France) Recipe |

You will need:- 8 ripe pears, cored from the base 6 tablespoons redcurrant jelly 1 tablespoon port or sweet sherry pinch powdered cloves and cinnamon 1 tablespoon orange juice 2 tablespoons brown sugar 1 dessertspoon corn flour 8 cloves
Preparation Time:- 15 minutes
Cooking Time:- 12-15 minutes
Oven Setting:- 350°F; Gas Mark 4
Place pears in a lightly buttered ovenproof baking dish. Dissolve the redcurrant jelly, powdered cloves and brown sugar in the port of sherry and orange juice, making liquid up to ½ pint with water. Boil to form light syrup.
Pour over the pears and bake in a moderate oven for 12-15 minutes. Strain off syrup. Mix with blended corn flour and bring to boil. Cook until transparent stirring occasionally.
Pour over pears and allow to cool. Decorate with cloves. This can be served with whipped cream. (see Quick Tip below). Serves 4.
Quick Tip
To whip cream: chill the bowl and whisk. Whip the cream lightly and slowly away from heat. As soon as the whisk leaves a distinct trail, stop whisking, otherwise you will have butter.
