Viennese Biscuits Recipe

You will need:-

4 oz. butter, warmed

1 oz. icing sugar, sieved

5 oz. plain flour

For the butter cream:-

2 oz. butter

4 oz. icing sugar, sieved

1 oz. cooking chocolate, melted

 

Preparation Time:- 15 minutes

 

Cooking Time:- 10-15 minutes

 

Oven Setting:- 3750°F; Gas Mark 5

 

Cream butter which icing sugar until it is soft (see Quick Tip below). Stir in sieved flour and mix well. If the mixture seems stiff, a few drops of milk may be added. Put the mixture into a piping bag fitted with a large star tube and pipe on to a greased baking sheet in small circles, rosettes or fingers, making sure that there are an even number of each different shape.

 

Leave in the refrigerator, or cold place, for at least 15 minutes to chill. Bake in a moderately hot oven for 10 to 15 minutes or until they are just beginning to turn golden brown. Cool on a wire tray.

 

Cream together the butter and icing sugar for the filling. Add the chocolate and mix well. When the biscuits are cold, sandwich together in parts with the butter cream, and dust the tops with sieved icing sugar.

 

Quick Tip

 

It is most important to cream the butter and sugar until really soft otherwise, when the flour is added, the mixture would be too stiff to pipe.
