Truffles Recipe

You will need:-

2 oz. butter

2 oz. castor sugar

few drops almond essence

3 oz. ground almonds

2 teaspoons cocoa, sieved

2 oz. cake crumbs, sieved

rum or sherry, or orange juice

For the coating:-

chocolate vermicelli

 

Preparation Time:- 15 minutes

 

Cream the fat and sugar until soft and fluffy. Add the almond essence, ground almonds and cocoa. Beat thoroughly. Mix in sufficient cake crumbs to form a stiff paste. Add a few drops of rum, sherry or orange juice to flavor.

 

Knead well and roll into a sausage shape. Cut into equal sized pieces and roll each into a ball.

 

Roll each ball in chocolate vermicelli.

 

Quick Tip

 

Using up cake crumbs: making truffles is an excellent method for using up the odd pieces trimmed from fancy cakes when making the layers even. Any flavor of cake can be used successfully. Crumble cake and store in an airtight jar until required.
