Treacle Tart Recipe

You will need.....       4 oz. plain flour

                               pinch salt

                               1 oz. lard

                               1 oz. butter

                               For the filling:

Preparation Time      8 oz. golden syrup

15 minutes                2 oz. fresh white breadcrumbs

                               grated rind of 2 lemons                              

Cooking Time           2 teaspoons lemon juice

25 minutes              

 

Oven setting           

400ºF; Gas Mark 6     

 

Sieve flour and salt into a bowl. Add fats cut into small pieces and rub them into flour until mixture resembles fine breadcrumbs. Add water and mix to a firm dough. Roll out pastry thinly on a floured table and use to line a 7-inch ovenglass flan dish. Re-roll pastry trimmings and cut in circles with 3/4-inch fluted cutter. Brush underside of each with water and arrange, overlapping, round edge of dish.

 

Mix together syrup, breadcrumbs, lemon rind and juice. Spoon filling into fan.

 

Bake in a moderately hot oven for about 25 minutes, until the pastry is pale golden.

 

Quick Tip

 

When using an ovenglass dish, to make sure the underneath of a tart or double pastry pie is brown, place on a metal baking sheet that has been heated in the oven whilst baking.
