Polka Dot Dandies Recipe

You will need:-

4 oz. butter

4 oz. castor sugar

2 eggs

4 oz. self raising flour, sieved

1 packet chocolate polka dots

2 teaspoons coffee essence

For the decoration:-

2 oz. butter

3-4 oz. icing sugar, sieved

few drops coffee essence

 

Preparation Time:- 20 minutes

 

Cooking Time:- 20 minutes

 

Oven Setting:- 350°F; Gas Mark 4

 

Cream butter and sugar until light and fluffy. Lightly beat the eggs and add a little at a time beating well between each addition to prevent curdling. Add coffee essence and fold in the flour. Add the chocolate drops, reserving a few for decoration. Spoon mixture into paper cases, which should be lightly dusted with flour. Bake in a moderate oven for 20 minutes. Turn out and cool on a wire tray.

 

To make the butter cream, beat the butter until soft and creamy. Add the sieved icing sugar a little at a time beating well, then the coffee essence. Mix thoroughly.

 

Top each cake with a swirl of the cream and a group of 3 chocolate dots.

 

Quick Tip

 

To be certain that cake tins have an equal amount of mixture, weigh tins when filled with the mixture and balance the quantity so that the same amount is in each and both tins weigh the same.
